Introduction to the Theory of Culinary Arts Continued 10: In this course students will review measurements and cooking methods. Curriculum continues with stock sauce, and soup knowledge, meats, poultry and seafood is introduced . Students are assigned a summer reading to prepare for ServSafe sanitation certificate in their Junior Year. Sophomore students are certified in CPR/AED knowledge.
