Advanced Culinary Arts Skills 12: In this course students are assigned to one of two tracks. Students have an opportunity to participate in cooperative education where instead of attending school they are employed in a local foodservice operation. Students not participating in the coop experience become the instructors assistants and help oversee day-to-day operations with the instructors guidance. All Senior students take over the shop area for one day without any instructor assistance right before graduation.
