Culinary Arts II: In this course, students will deepen the skills they acquired in Culinary Arts I by assuming greater responsibility for the operation of lunch service. They will also examine food principles including food costs; menu planning; table setting; plating; garnishing; and advanced baking. This course is a prerequisite for Culinary Arts III.
